Smoothie heaven

Lately, I have been on a smoothie kick. I have been trying everything to get all my fruits and veggies in during the day. Today I made a killer smoothie. Warning this is very addicting! When my bananas start to turn I cut them in slices and freeze one banana in a bag. It makes it easy and then I don't have to add ice.

1 Frozen banana
1 cup of Almond Milk
1 tablespoon of smooth PB

Blend until smooth, add more milk if needed.. I have a Nutribullet and I love that it blends it fast!

Fall off the bone ribs

My Husband (yes) makes amazing ribs. He always finds pork short ribs on sale at our local grocery store. This week he bought  packs for a total of 9 ribs.

Coat the ribs in McCormicks Grill Mates Pork Rub.

Pour Sweet Baby Ray's BBQ (or whatever sauce you prefer) sauce all over the ribs. Let them sit for 6 hours in the fridge.

Pour into a 9 x 13 Pyrex dish. Cut an onion and add to the top. Cover with aluminum foil.

Cook on 350* for 75 minutes
Then increase to 400*, take off foil and cook for 30 minutes.

Heart Warming Potato Soup

So I got the idea from Pinterest (what else is new?).  We picked 30 lbs. of potatoes and I didn't want them to go bad so I altered a few recipes and made a new one.

I hit a little snafu along the way. I cut too many potatoes! That's ok. I pan fried the rest for breakfast.

Cut 3 pounds of potatoes (I used Yukon Gold) into cubes sprinkle 1 packet on the potatoes and mix together

2 Cups of fat free sour cream or light (once it is all mixed you cannot tell the difference)
2 cans of cream of ______ soup (you decide) I used mushroom you can use Chicken
1 can of chicken broth
2 packets of Ranch dressing (the dry kind)
Mix all the wet ingredient with the ranch.

Mix with potatoes.
Put in crock pot for 8 hours in low.

Shrimp Alfredo

I love shrimp Alfredo but when it is frozen in a bag it is just gross. Today it was 50*, rainy and cold. An easy meal to the rescue.



Start with a box of noodles (16 oz or 1 lb)- Jeremiah picked rigatoni ( I try to involve him).
1 Jar of Alfredo sauce (15 oz)- I like the generic brand it was on sale 3 jars for $5. Buy what you like
1 bag of cooked shrimp frozen. I bought a 2 pound bag from Safeway when it was on sale $5/lb. That is $10 for the whole bag of 110 shrimp!  I take out about 30 shrimp. *note this bag will allow me to cook 3 meals!


1.Place shrimp in a colander and run warm water to defrost the shrimp. Let them drain in the sink
2. Boil noodles for about 11 minutes
3. As the noodles boil warm sauce on low for the same time as the noodles. For the last 5 minutes add the shrimp to the sauce.
4. My family loves Texas toast. Stick a few pieces in the oven and there you go!



Easiest 4 ingredient meal ever! Add a side of broccoli or whatever you choose. You can also add broccoli to the noodles and spice it up but I know Jeremiah won't eat it if I do.
